Ooh, they're pretty!
I like the scallopped edges and I'd say keep them if you can. If they do look they they're going to fray howabout overstitching the edges with a blanket stitch? If you use a fine embroidery thread it shouldn't add weight and as you only have the two sleeves to do, shouldn't take too long.
That looks like it's quite a tight weave so you should be able to get away without stabaliser or using a hoop. Just practice on a piece of scrap first so you get the tension right.
